If you have recently been or you are currently living in Singapore and you are a fan of Greek food, then you’ve probably heard or even visited Blu Kouzina, a well-established restaurant that pays tribute to authentic Greek and Mediterranean cuisine.
But what’s the story behind the famous Greek eatery? Which are the most popular Greek dishes on their menu? Blu Kouzina team was kind enough to answer our questions and we are more than happy to share them with you!
Q: When was the restaurant established?
“The restaurant was established in the year 2010”.
Q: Who are the owner and the head chef of the restaurant?
“The owner is Effie and Dennis Tsakiris. Effie is also the head chef of the restaurant, who also created the entire menu.”
Q: What’s the story behind the restaurant?
“Blu Kouzina started off as a full on passion project. The motivation to start Blu was brought about by Effie’s dream to open up a restaurant – how it happened though, is a story of its own. While Dennis was part of the corporate world, he would constantly be travelling every week, and whenever he would be back home in Singapore, he would never want to leave the house, which led Effie and Dennis to always invite friends over. As a result of that, Effie would always wind up cooking a feast for everyone. This progressed to the point where some of Dennis’s colleagues would ask if Dennis and Effie could host events at their house, and have Effie cook, coupled with creating an ambience for them.
Once Effie realised the success of this small “project” she finally got the courage to embark on her own dream of opening up her own restaurant. Dennis winded up being okay with it, due to one specific factor. He would do a lot of business in Japan, and through that, he understood that there is a market where people really do value high-quality ingredients – this was enough to give Effie the go ahead, and to that end, Blu Kouzina was born. It was essentially a test, there was no marketing involved or advertising, the restaurant was in a small shop house, and again was there to fulfil Effie’s passion and dream.
There was absolutely no outbound marketing done, and the restaurant fully relied on word of mouth. It was part of the whole philosophy behind Blu Kouzina – to always remain, genuine, and to be sustainable with all our practices.”
Q: What’s the most popular Greek dish(es) on the menu?
“Xtapodi Sharas (grilled octopus), Paidakia Sharas (grilled lamb chops), Hummus, Taramosalata, Tzatziki.’
Q: What’s the chef’s favourite Greek ingredient(s)?
“Extra Virgin Olive Oil. One of the Hidden Gems to all of this is the Family’s’ Love, Respect and Passion it has for its Olive Oil Estate in Greece, the Root of it all “Green Gold Extra Virgin Olive Oil”. The Understanding of Harvesting and Maintaining Olive Groves was and is the Inspiration for our approach to Food.”
