FASOLADA

Fasoladafasoulada or sometimes fasolia (Arabic: فاصوليا), (Greek: φασολάδα, φασουλάδα or φασόλια) is a Greek, Levantine, and Cypriot soup of dry white beans, olive oil, and vegetables, sometimes called the “national food of the Greeks”.

Preparation time: 20′ | Cook time: 90′ | Servings: 4

Ingredients: 1/2 kilo beans (white, medium-sized), 1 level teaspoon salt, 2 sprigs celery, 3 carrots, 1 onion, 5 cloves of garlic, 2-3 tablespoons olive oil, 1 tablespoon tomato paste, 3 bay leaves, 2 sprigs rosemary, 1 vegetable bouillon cube, 1 red apple, 2 liters water.
